Red beans with sautéed eggplant.


Practical, simple and quick ideas to prepare a dish.
When I cook beans to prepare, for example, a cream soup, I reserve the cooking liquid and a part of beans to make other dishes the next day.
Preparation:
In a skillet, we sauté, in extra virgin olive oil, an eggplant cut into slices; when it is tender, we add the red beans (previously cooked) and stir for a few minutes.
